Google indexes your webpages and not your website. The spiders are responsible to fetch and crawl through the webpages first before your webpage gets a cache certificate and then indexed in Google.

Most of the times Google will index a new website gradually, yes. That is at least what I have observed with most of my websites. The speed at which Google will index all your internal pages will depend on different factors though.

Submit your sitemap in google search engine console to index your website easily.

Google has many scenarios to index a website. Generally, Google index the website automatically depends on the website visits. But it takes some time. If you need to index fast, you need to submit sitemap.xml file in Google webmaster tool.
