Google sitemaps - cms, forum etc

So what do you do when you have a cms and forum and blog running on the same domain, all Open Source - all with separate Google sitemap pluggins... do you just submit each of them to Google?

Sure. You can have multiple sitemaps for one website. In fact, large websites must have more then one as Google limits the size of each sitemap. I do believe you need to have a master sitemap to tie them all together, though (don't quote me on that. None of my sites require multiple sitemaps)..
