I've exchanged links with a a PR 7 site. The problem is that they've got a lot of links on their links page (also PR 7). Will Google still be able to find me? How many links are too much?

Well, you'll get approximately a PR of 5 if they have 125 links on their page.
Do you mean from that one link he will get a PR of 5? Or that it's value to him will be a 5, because of the number of links?

Technically, he'll get 85% of a PR of 5, assuming the person have an exact 7. If the person have a 7.9 he could get more.
Two updates gone and this link still hasn't been "caught" by Google. I visited some of the other sites on their links page and it's not on their back links either. Is it because they might have too many links?

They could also be doing something to block the links form Google.

You could check their source code and see if they link to you with a javascript or a form. Javascript-links and form-links won't get picked up by google.

And check the meta tags...
And robots.txt
They have regular links, no javascript stuff.
the only strange thing in their html code is:
<meta name="revisit-after" content="10 days">
<meta name="robots" content="index, follow">
but as far as I understand it, this doesn't stop Google from finding my site.
Very strange...

The "<meta name='revisit-after' content='10 days'>" doesn't exist so that has nothing to do with it. Maybe it's something in the Robot.txt file then alltough I didn't know you could block outgoing links for google with it.

If anysite has that many links and still has a PR 7 site, something is up...

Are they using a redirect script? If so, check to see if the redirect is 301 or 302. If it's a 302 redirect, the PR won't be passed on (in a majority of cases).

So how does this robot.txt google blocking work, cause this is the first time I've heard of this.

You simply block a folder that contains a redirect script with robots.txt
