If I want to have a site that talks about "diet soda", would it be better to get "diet-soda.com", "dietsoda.com" or "diet_soda.com" assuming that you couldn't get all three?

You can't use underscores in domains.
diet-soda.com is better

A hyphen is only better from the standpoint of search engines, as they can parse it out more easily. It is worse from the standpoint of most other forms of promotion. In some cases, it would make it very difficult, e.g., radio ads.
"And visit diet hyphen soda dot com!" :p
