Okay...so I have the resources to build a content site to launch with over 100 articles on a subject. Granted the market for this topic is somewhat overcrowded anyways...should I go ahead and build the site or find other topics?

Depends how you value your time
If the site is gonna take you maybe 1 - 2 days or a very short period to create, I would probably make it, if it was gonna take me several weeks to build and the promise of revenue was not too good, I would probably move on to other things

It would take a day at the very longest. It would take a couple of hours to get the website up and then the rest of the time just inputing articles.

I would do it then...
I did that with a few sites that took me a day or so to put up and some of them earn $5 a day with absolutely no work.

Yeah, go for it, a days work for even $5 a day is good in the long term... $5 x 365...

You say that the topic is over-crowded. If creating the site is not a problem then promoting the site will be. It comes down to how much time you're willing to put in to promoting it (getting backlinks etc)
